Aubergines are one of the best vegetables. When cooked properly, it has a lovely creamy texture and soaks up almost any flavour you add to it. We love fried, baked, roasted or stuffed aubergines. They are also such a versatile vegetable that can be used anywhere from curries, to vegan recipes, salads, dips and skewers.
UK aubergine season starts in May and ends in October. They are at their best between June and September.
