This wonderful local cheese is made by Robin & Carla Betts on their family farm not far from Sevenoaks. The unpasteurised milk comes directly from the family’s herd of Freisian Holstein cows in the morning, meaning it is naturally at the perfect temperature for cheesemaking.
The cheese is like a cheddar in style. What makes Winterdale Shaw unique is that it is aged for 10 months in their own cave which has been dug deep into the chalky North Downs of Kent. This further develops the flavour which is deep & complex, with the rich, creaminess of the milk coming through.
Great as an introduction to local artisan cheeses, which may be used in place of a cheddar as well as being a fantastic addition to any cheese board.

Coming from generations of farmers, Robin and Carla Betts decided to start making cheese in 2000. In 2006 their first "trial batch" already received their first Award in the World Cheese Awards. The Winterdale cheese dairy is housed within a traditional oak framed barn located at the head of a picturesque valley on the Northern edge of the family farm, which old local maps identify as ‘Winterdale Shaw’.
