This creamed coloured, carrot-shaped root vegetable is a member of the parsley family. They can be eaten raw, but are often roasted, boiled, fried or steamed. Similar to carrots, they can be prepared in a variety of ways but are at their sweetest when roasted. Their flavour is sweet with an earthy nuttiness. When cooked until tender, they have a lovely, starchy texture that works beautifully roasted.
Parsnip is high in fibre and is a low-fat food rich in minerals and vitamins.
