Traditionally baked on the oven floor or a large baking tray the dough for this loaf is folded and shaped into a long oval. Distinctive cuts are then made across the top of the dough that open up during baking to make this impressive looking loaf.
Our bread comes from our lovely local bakers in Wingham. They started in 1931 in a small village caller Westmarsh, near Ash in Kent. The business is now run by the founder's grandson Richard, who has progressed the bakery to suit modern demands whilst maintaining their traditional roots. They have a wonderful reputation and supply some of the most prestigious farm shops in Kent.
